My obsession with cucumber sandwiches started a few years back while reading “Seeing a large cat” by Elizabeth Peters, a historical novel centering on a formidable turn-of-the-century archeaologist getting in trouble while digging around for Egyptian mummies and the sort..Amelia Peabody, that’s her name, was very particular about her afternoon tea AND her cucumber sandwiches.
After digging around the internet for inspired recipes I settled on this recipe from The Paupered Chef. It may not the most traditional version, but it is the one I like best because it incorporates the fresh zing of chopped mint.
